I recently met a dynamic woman living on the shore of Pleasant Lake. We started discussing how nice it was to be out and about and visiting again after the pandemic. She explained to me how the neighborhood ladies had learned to use Zoom in the last 18 months to get together over wine and appetizers “remotely”. I loved that idea. My husband uses Zoom for business meetings, but I had never thought of using Zoom to socially connect. This is brilliant.
Even once they could meet in person everyone sat six feet apart and brought their individually wrapped snacks. These “Pleasant Lake Ladies” shared stories, gossip and my favorite recipes! Rita Larson found a recipe for a delicious crock pot chicken sandwich she likes to serve on a bun with coleslaw and pickles. She gave the recipe to Gloria Warner, who shared a taste with Susan Carlson who gave the recipe to Sharon Peterson. As it turned out the chicken was so popular, all four made the recipe for their 4th of July gatherings! The best part is the leftovers can be modified and made into so many menu options. Add seasoning to the chicken for taco with Mexican flare, Rebecca Bruggeman Hartman adds super foods rice for a healthy Minnesota Hot Dish. Linda Kelso and I discussed mixing the chicken with cream cheese and chives for a delicious puff pastry filled appetizer!
I was invited to join the Pleasant Lake Ladies for their gathering a couple of weeks ago. I was immediately handed a glass of Merlot topped with a splash of Prosecco. It was then I realized this group was seriously dedicated to fun! Sadly, Susan is leaving the group due to a recent home sale, but she has assured the rest that the new neighbor will be a “pleasant” addition to the group. Wine, appetizer and Zoom experience are a plus. Hugs and joy, Sandy
