Loving lime, not Lyme

It has not been a secret to my friends that I have had Lyme disease for about three years. Most days I feel fine and can do just about anything I’d like to do. On bad days it’s as if life has handed me a basket of lemons and limes…pun fully intended.

On those days I rest and recuperate. It also helps to breathe in the smell of fresh citrus. I especially like the smell of a lime. I grate the peel gently and then sniff it throughout the day. I encourage you to try it… the odor really lifts the spirit. It also can remind you of the beach and a margarita!

I recently traveled again to Florida, the home of key limes. These tiny green gems are packed full of flavor. The best thing about a lime is that you can pair it with sugar for a sweet treat or juice into a marinade for a savory and sour meat flavoring.

I bought a red lime tree and brought it back to Minnesota with me. I asked the gentleman at the shop in Florida if I could grow it indoors…yes of course…it only grows to 12 feet high! Hmm…this may be problematic. As of now it is a manageable 18 inches so I have time to come up with a back up plan. Enjoy your limes and avoid deer ticks at all cost.

When life hands you lemons make lemonade,
when life hands you limes, make pie.
