For those you who follow me on Facebook you know that recently our family faced a terrible car accident where my nephew Tanner and his 7-year-old little boy Brody were seriously injured. It happened in a blink. They were on the way to a baseball game and Brody dropped his bat while riding in the back seat. He took off his seatbelt “just for a second” to get the bat. Tanner, trying to help Brody, swerved into oncoming traffic and had a head on collision. Their lives will never be the same. Both survived but will have to face several surgeries and months wheelchair bound. I am going to their home to see what I can do to help.
Of course, my mind goes to food. Easy freezer recipes to make while I am there that can be heated and served quickly. They also have to taste good and please palettes of kids and parents. I am pulling some of my favorite food exchange recipes and I will share them here with you.
I feel rocked by the accident. It is something that I have done several times. Reached for a purse or phone on the floor of my car. We all make mistakes. I am once again reminded how fragile life can be. No promises of tomorrow or next week. It is good to live each day with a purpose. “Do all the good you can. By all the means you can. In all the ways you can. In all the places you can. At all the times you can. To all the people you can. As long as you ever can.” John Wesley wrote this, and I have used it several times in the column. It rings truth every time.
