I was asked last week if I had to choose one food to eat for the rest of my life would it be chips or chocolate? I thought long and hard and then I chose butter. Is there a food any better than butter? It can be sweet or savory…. butter chocolate frosting or hot buttered popcorn… how can one food be so versatile?
My first memory of butter was when my brother Gary was little he was found sitting under the kitchen table eating a stick of butter like a Hershey bar. My mother didn’t buy it on a regular basis, as it was expensive. Oleo was usually in the shopping cart but she must have bought the butter for a special occasion and he saw his opportunity for a treat.
We learned to love butter from our neighbor who would cut thick slices of butter and put it on fresh saltine crackers for us. We would sit like puppies and beg for more!
Now I am more reserved in my butter use but I would never consider buying margarine unless a recipe specifically called for it. With the holidays coming up I say enjoy your family, enjoy your friends and most of all, enjoy your butter!
If someone says you used too much butter or cheese on something, stop talking to them. You don’t need that kind of negativity in your life.
