A special Christmas memory




My favorite holiday is Christmas. The reason I love Christmas is because I get to be with all my family. We don’t really have any traditions but we do cook great food on Christmas Eve and Day, and bake a lot of goodies before Christmas.

Since my mom and dad are both from Grand Marais we trade off and on going to grandparents’ houses Christmas Eve and Christmas Day. I always go to Christmas service with my mimi. She is my mom’s grandma.

One of the treats we make is Special K bars. They are my dad’s favorite. His grandma Ruth Helmerson made them every Christmas. She passed away the year before I was born on Christmas Day, so we make them to have her be a part of our Christmas celebration.

Here is the Special K bar recipe:

Combine ¾ cup sugar and ¾ cup white karo syrup
in a large sauce pan on medium heat. Bring to a
boil.
Add 1 tsp. vanilla and ¾ cup creamy peanut butter.
Stir in 6 cups of Special K cereal
Spread mixture in 9×13-inch pan. Let stand.

In a small sauce pan on low heat melt half of a bag of chocolate chips and a full bag of butterscotch chips. Pour over cereal in the pan and cool.
